Grammy’s String Beans

Simple but delicious. I’ve made a slight modification to her recipe (chicken stock), and these are slightly better than Grammy’s (did I say that?)

Ingredients:

    1) I lb. green beans, trimmed (only where they were attached to the vine…the curly bits on the bottom are fine)

    2) Three slices/rashers bacon, chopped

    3) 1/2 C. chicken stock

    4) 1 Tbsp cider vinegar

Method:

1) Chop the beans to your preferred length:

    2) Cook the bacon over medium heat for three to four minutes:

    3) Add the chicken stock and beans.  Cover.

    4)  Simmer/steam over medium heat for eight minutes.  Test for doneness.  If not to your liking, continue to cook, covered, checking every minute.

    5)  Stir in the vinegar and cook for 30 seconds.

    6) Enjoy!

Tamal Day

They are labor-intensive, but freeze extremely well, so now I have enough for a few months.

I made two kinds:  chicken with salsa verde, and for the first time, “de elote.”  I don’t know what that means, but they’re a combination of pureed corn, whole kernel corn, and corn batter.  That may sound a bit redundant, but when served with “crema” (runny sour cream) the sourness of the cream perfectly balances the sweetness of the corn, and they’re my favorites.

Welcome to Babyland

The National Memorial Park (/National Funeral Home/King David Memorial Garden/Cremation Center of Northern Virginia) is a block and a half from my house.  Part of its 200 acres are sectioned into “themed” areas.  Here are some pictures from “Babyland.”

I’m don’t really have anything to say, and I’m certainly not poking fun.  To me this part of the cemetery is visually interesting, but also very moving, especially the tributes left.  So just some pics:

Richard M. Nixon’s Favorite

Chicken Tamale Pie, adapted from James McNair, Chicken.

1.  Combine one 28-oz. can tomatoes with one 16-oz can creamed corn, three teaspoons salt, one medium chopped onion, one half cup olive oil and 1-1/2 Tbsps chile powder in a large saucepan and cook for 15 minutes.

Preheat the oven to 350 degrees F.

In a mixing bowl, stir together one cup milk, one half cup cornmeal and three eggs, lightly beaten:

Add to the tomato mixture and stir constantly for 15 minutes [confession: my arm got tired after five and I stopped].

Remove from the heat and stir in two cups coarsely chopped chicken and one cup chopped olives.

Pour mixture into a lightly greased shallow ovenproof dish [I used a 13 x 9 pan].  Top with one cup shredded Monterey Jack mixed with one cup shredded sharp Cheddar cheese.

Bake 35-45 minutes or until the pie is firm and the cheese is crusty.

The result?  Homey and comforting, and some nice heat from the chile powder.  Will I make it again?  Maybe.
