Ethiopian Chicken

This is very simple to make, just chicken pieces coated in a spice mix and baked.

Ingredients:

  • 3 lbs. chicken drumsticks, thighs, or wings
  • 2 Tbsp. oil or melted butter
  • 2 Tbsp. sweet paprika
  • 1 Tbsp. hot paprika or cayenne
  • 2 tsp. garlic powder
  • 1 tsp. ground ginger
  • 1 tsp. ground cumin
  • 1 tsp. onion powder
  • 1 tsp. black pepper
  • 1 tsp. ground fenugreek
  • 1/2 tsp. salt
  • 1/2 tsp. ground cardamom
  • 1/4 tsp. ground cloves

Method:

Preheat the oven to 325 degrees.

Mix the spices and salt. Coat the chicken with the oil or butter. Add 2/3 of the spice mix and stir to coat well. Place the chicken in an oiled/buttered casserole dish and sprinkle the remaining spice mix over top:

Bake, covered, for 90 minutes. Remove the cover and bake for and additional 15-30 minutes, or until of desired doneness.
